What’s for Dinner?

Homemade Cheeseburgers

Welcome to Winter! The weather has cooled, so our meal plans are turning to more slow cooked, warming meals to keep us warm and really nourish us to protect from illness.

  1. Tuna Mornay

There’s not many families I’ve come across who don’t love a Tuna Mornay, and this one from RecipeTin Eats is by far the easiest and tastiest version around.

  2. Lasagne

My lasagne recipe clears out the veggie crisper. It takes a little of this, a little of that, and a big shortcut that will probably leave traditionalists shaking their fists at me. No apologies here, I’m a busy mum. C’est la vie.

  3. Homemade Cheeseburgers

Made from scratch, these burgers are super simple and easy to whip up. Feel free to swap around the fillings for your family’s favourites. I like to keep mine simple with cheese, onion, lettuce and tomato… and don’t forget the sauce!

  4. Quick Asian Beef Ramen Noodles

Think an asian beef rice bowl, but with noodles and stir fried veggies... yum! Another great recipe from RecipeTin Eats, I do like to add some thinly sliced, or grated, carrot and zucchini to up the veg intake just a little bit.

  5. Fish Tacos

Feeding Five Frugally are a great Instagram account to follow for meal ideas that are affordable and delicious, and Lee hasn’t disappointed with this one. Simple, quick and tasty, one the whole family will love!
Use the sauce of your choice, if I’ve really had a day, I just use some quality mayo and hot sauce (skip for the kiddos), but if I have the time a lime crema is the perfect condiment. Just mix sour cream, a pinch of lime zest, some lime juice, and a little minced garlic. If it’s a little thick, a splash of water will help thin it out a bit.

  6. Charlotte Chicken

This is an old family recipe we used to have as kids. Originally from the Women’s Weekly Microwave Cookbook, I think it was called Sweet and Sour Chicken. We had a school-friend who would come to our house every Wednesday after school and she would often request this dish for dinner, hence it was coined, Charlotte Chicken. It’s a chicken casserole done entirely in the microwave in a sweet, tangy sauce made with pineapple, soy sauce and brown sugar.

  7. Pumpkin Dhal

Our meat-free meal for this month is pumpkin dhal. I actually got this recipe from our kids’ daycare centre, they have it quite often for Meat-Free Monday, and the kids love it. It can be done on the stove or in the slow cooker, both are delicious.

Hope you enjoy these meals, as always, if you have suggestions or questions, just drop me a message here!
